Identification
Turn the cap over first: hedgehog mushrooms have soft, pale spines that detach when rubbed. The cap is irregular and dull orange to tan, the flesh is brittle and pale, and there is no ring or volva. They grow from soil rather than shelving from wood.
Uses and ecology
Hydnum species are mycorrhizal forest partners and are commonly cooked much like chanterelles. Older specimens can become bitter. No dangerous toothed, soil-growing lookalike is generally recognized, but that does not remove the need to confirm the whole mushroom and its habitat.

DNA evidence places hedgehogs in the same order as chanterelles, which helps explain their similar culinary character.
