Identification
Each fan is thin, tough, and flexible, with concentric zones of brown, gray, cream, rust, or blue-gray. The upper surface feels finely velvety. Turn it over: the fertile surface should be white to cream and densely packed with tiny round pores. A completely smooth underside is false turkey tail.
The species name versicolor means many-colored, but color changes with age, algae, and weather. Texture and pores are more dependable than any particular palette.
Uses and evidence
Turkey tail is too leathery for ordinary eating. Polysaccharide-K, or PSK, is a standardized extract used as an adjunct to cancer treatment in Japan and has been studied alongside conventional therapy. The United States Food and Drug Administration has not approved turkey tail or PSK as a cancer treatment. A wild tea, powdered fruiting body, and a standardized clinical extract are not interchangeable.
Ecologically, turkey tail is a major white-rot decomposer that breaks down lignin in dead hardwood.
